Grilled Sweetcorn Salsa ???

makes 4-6 servings
Ingredients:
4 fresh, corn cobs (local/organic if possible)
4 vine ripe tomatoes, diced
2 fresh garlic cloves, minced
1 red or green bell pepper, seeds removed and diced
1 large avocado, diced
1 jalapenio pepper, seeds removed and finely diced
1/4 cup packed cilantro leaves, chopped
1/4 cup fresh lime juice
sea salt and pepper to your taste
1/4 cup crumbled feta cheese (optional)
Instructions:
Preheat a very clean outdoor grill to high heat and lightly oil grates.
Grill the corn, turning occasionally, until it’s charred and cooked through, about 10 minutes total. Once cooled a bit, cut the corn off the cob and place kernels in a large serving bowl.
Add the tomatoes, garlic, bell peppers, avocado, jalapeño pepper, cilantro, lime juice, sea salt, and pepper, then gently combine.
Crumble feta ontop if desired to serve.
