Okay, okay…you asked for pineapple ? sorbet and, friends, now you have PINEAPPLE SORBET!!! ? ⠀
So. Are you ready for this? It’s 2 ingredients: frozen pineapple and lime. ? Plus it’s #cleaneating, low-carb, and #dairyfree and is it is absolutely delicious! Duh. ⠀

The pineapple I used was very sweet so there was no need to add any sweetener, but you could add a smidge of raw honey or pure maple syrup if you’d like, depending on the sweetness of your pineapple. ⠀

Here’s ???how to make it…⠀⠀

? 4 1/2 cups fresh or frozen pineapple (if fresh, just freeze until solid)⠀
? 1 tbsp freshly squeezed lime juice, plus more to taste⠀

TIP: Let the frozen pineapple thaw for a bit (10-15 minutes) at room temperature so it starts to soften. ?Otherwise, you can help the processor along with a lil’ warm water. ⠀

If you’re using fresh pineapple, freeze it in chunks until completely solid, which should 2-3 hours, but I usually just leave it in the freezer overnight. Place the frozen pineapple into the bowl of a food processor or heavy duty blender. Blend until smooth. ⠀

Eat immediately for a softer texture, or transfer into a freezer-safe container and freeze for 3-4 hours or until firm. ⠀
