🌱Chickpea nuggets (balls?) and sweet potato fries…my idea of fast food😋to get through #humpday friends. How’s your week going? This beautiful weather is bliss. I’m loving it. How about you guys? These chickpea nuggets are so easy to make and quite delicious.🌱.

🌱Recipe: Process 1/2c rolled oats until powdery-like flour. Reserve in separate bowl. Process 1-15 oz can chickpeas with 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika, 1/2 tsp chili powder. Pulse until crumbly. Add 1/4c cooking liquid/liquid from can + 1 tbsp olive oil + 1/2 cup of the oat flour (prepared earlier) and pulse until a ball forms. Use small ice cream scoop to form equal sized balls. Roll in toasted breadcrumbs and bake 375F about 20 minutes until golden.🌱.
