Happy FRIDAY all! ARUGULA-mixed green WALNUT PESTO pasta and crispy pan seared scallops. I’m not going to lie, I am nervous. I just split this bowl with my boyfriend and when I was a kid Scallops always made me sick…but I’ve been really wanting to try them again recently so I bought some 🙈 For now, I feel okay and I hope it keeps up 🤞 Regardless, this was DELICIOUS!! Considering I have never cooked scallops before, I did my research and they came out perfectly. Boyfriend approved. Also, I used @lef_farms spicy greens in this pesto and it gave it the perfect kick. Happy weekend loves!



Deets: arugula, roasted tomatoes and olives (see stories for tomatoes), seared scallops (patted dry*** seasoned with salt and pepper and seared on medium high in cast iron in one teaspoon olive oil and one teaspoon ghee for 2 minutes per side), chickpea pasta with this pesto. Pesto: 2 cups arugula, 1 cup @lef_farms spicy blend greens, 1/4 cup walnuts, 1/4 cup olive oil, 2 garlic cloves, juice of one small lemon, 1/2 teaspoon salt, 1 teaspoon coconut aminos, 1/4 teaspoon red pepper flakes…process in food processor until smooth. •
