Happy Friday!!! DAIRY FREE BAKED STUFFED SPINACH and RICOTTA SALMON! Swipe to see the close up. SO delicious!!!! Took a page from my babe @collegenutritionist and stuffed my salmon today and it was so simple and a major game changer. Thinking this would make a perfect Easter or Passover meal. Paired this with my last piece of sweet potato toast topped with avocado ? and cucumber noodles with tomatoes, dill, parsley, red pepper flakes and a tahini drizzle. Hope you’re all having an amazing week! Any plans for the Holiday? I am actually working a lot this weekend but hoping to have a little date night tomorrow. What are your plans?



Deets: sweet potato toast with avocado and hemp seeds, wild salmon…sauté some spinach with garlic and toss with dairy free ricotta (I used @kitehillfoods) cut a pocket in the middle of the salmon and stuff the filling And Brush with olive oil and season with salt plus herbs of Provence then bake on 400 for about 12-15 minutes depending on thickness. Serve with spiralized cucumber and tomatoes with dill and tahini. •
