I am ready to GNOCCH(I) this Christmas out of the park! Sharing this gluten-free CRISPY BAKED “CHEESY” CAULIFLOWER GNOCCHI made with my homemade ricotta (I’ll repost recipe below), which would be perfect for the holidays! Merry Christmas Eve all! Running around getting everything done today before I head down to my brother’s for a Secret Santa exchange later. After that it’s back to my boyfriend’s for hot chocolate and Santa cookie making with his kids. Deets: roasted purple Brussels; greens, soft boiled eggs, wild smoked salmon and Trader Joe’s cauliflower gnocchi (thaw and sauté in a little oil to get it crispy, then mix with some dairy free ricotta…I used my homemade ricotta…then top with @germinal.organic crushed rosemary crackers and bake for about 10 minutes on 400). •
