Just keeping it super simple today with this veggie red lentil stew and very lightly toasted rye bread.

This was a one-pot dish. I simply cooked 90g lentils with 1 finely chopped shallot, 2 cloves of garlic, 1 tsp Madras curry powder, ½ teaspoon ground coriander, ½ teaspoon ground cumin, 300ml veggie broth, 2 tablespoons of fresh chopped coriander and 1 chopped red ?. I let this simmer for 20 mins before adding ½ a medium courgette and 100g of chopped cherry ?. I simmered for another 6 minutes then served in a bowl alongside the bread. You can eat this Stew with rice, potatoes or naan bread. #simplevegan #simpleveganrecipes #lentils
