My kind of fast food! When you don’t have much time, you can still eat healthy. This egg in a tomato is a great combination of fat, protein, and fiber, making it an eggtastic quick breakfast option. This is an oldie but goodie recipe from my website that I’m bringing back. Hope you are as eggcited to try it!

2 Roma tomatoes ?
2 hard boiled eggs
Salt and pepper

Instructions:
Slice tomato longways. Empty it out. Cut your egg in half longways. Place egg inside the tomato. Season with salt and pepper.
