PLANT BASED TAQUITO TUESDAY!!! Happy Tuesday loves! Busy day of work, cooking for clients (check my stories) and projects around the house today…thinking about making some of these taquitos soon 🙃 with my avocado crema, since I have 3 ripe avocados to use up! The crema recipe is on my blog and reposted below. For these, I used @sietefoods Almond flour tortillas, stuffed with roasted sweet potatoes, mushrooms, roasted peppers, sautéed spinach and @miyokos_kitchen Vegan mozzarella and crisped them up in coconut oil. Paired these babies with some fried plantains and my avocado crema. •

Avocado crema: one ripe avocado, a tablespoon coconut cream, 1/4 cup Cilantro, tablespoon of lime juice and salt to taste. Process in food processor or blend in a blender!
