SAVORY MISO SCALLION OATS!! Why has it taken me so long to try savory oats? I don’t know…but I am hooked and if you’re an oatmeal fan you HAVE to try this! I love that oats absorb any flavor you add to them. I have made this 3 times in the past week, once for dinner ? Takes less than 15 minutes for this meal! I’m off to go play with some puppies today…because we have plans for a family addition this year ? Then Tony and I are headed to Providence for dinner with my Uncle. Hope you all had a fabulous week! Deets: (makes 2-3 servings) 1 cup gluten free Old Fashioned oats (I use @bobsredmill), 1.5 teaspoons miso paste (I used brown but white would work too), 2.5 cups broth (I used @bonafideprovisions bone broth…could also use bouillon/water), 1 teaspoon of tamari soy sauce, 1 teaspoon coconut aminos, 1/2 teaspoon salt, a couple tablespoons chopped scallions. Bring all ingredients to a boil then stir, reduce heat to medium low and low to simmer/cook for 10-12 minutes stirring every couple minutes. (If you want to add some sweetness add some maple syrup). Top with smoked salmon, avocado, baby spinach, and a @vitalfarms soft boiled egg (tutorial in highlights). •
