TACO-ish TUESDAY bowl! When you have an abundance of ripe avocado you make cilantro avocado Crema 🙃 I’ve posted this recipe before but I’m posting again. Happy Tuesday loves! I literally have had the worst day full of mini crises…but I’m trying to breathe through it and remind myself that everything is going to be ok 🙏Had this loaded bowl is earlier before I had to scoot out of the house, and it took no time to throw together! Deets: Arugula, smoked salmon, cabbage, sautéed broccolini, soft boiled @vitalfarms eggs, roasted plantains (sliced, tossed in avocado oil and sprinkled with salt and roasted on 400 for about 20 mins, flipping halfway), Avocado crema: one ripe avocado, a tablespoon coconut cream, 1/4 cup Cilantro, tablespoon of lime juice and salt to taste. Process in food processor or blend in a blender!
