?Tahini Chickpea Stew, creamy hummus, and mashed avocado with lime and sea salt?Sorry for my absence friends. Writing a cookbook and looking after 3 kids who miss their friends is no easy task. How many of you are still cooking 3 meals a day? Covid cooking is exhausting!!! The positive is I get lots of opportunities to test my recipes:) Happy Monday everyone .?
✅Recipe: Heat 2 teaspoons olive oil in a medium saucepan over medium-low heat. ✅Cook 3 minced garlic cloves for 30 seconds. ✅Add 1/2 tsp smoked paprika, 1/2 tsp onion powder, 1/2 tsp oregano, 1/8 cayenne, and 1/8 chipotle and mix. ✅Add 1 can (14 ounces) diced tomatoes, 2 tsp tahini, and 1 to 2 tsp maple syrup. ✅Bring to a simmer and add the 1 can chickpeas (15 ounces), and 1/4 cup vegetable broth. ✅Continue to simmer until the chickpeas are warmed through. (Add more vegetable broth to sauce as needed.) ✅Season with salt and freshly ground black pepper.
