Today I’ve made a warm red quinoa salad with peas, 🌽🌶spring onions, black beans and parsley. I cooked the quinoa in vegetable broth to give it a bit of flavour. I’ve also included baked tofu 😋, courgettes, broccoli, spinach and cherry 🍅. ~
