Today I’ve made a warm red quinoa salad with peas, ??spring onions, black beans and parsley. I cooked the quinoa in vegetable broth to give it a bit of flavour. I’ve also included baked tofu ?, courgettes, broccoli, spinach and cherry ?. ~
