We love vegetable stews in Nigeria, the only problem is that traditional recipes are packed with oil. You literally see the oil floating on top of the stews ? Mine is oil-Free and still super delish ?

I love eating vegetable stews with rice but they go fantastically well with sweet potatoes. Today I cooked my signature vegetable stew with sweet potatoes and black beans.
