Wholewheat pasta, mushrooms, ? and spinach – I live for simple meals like this these days. This is the simplest recipe ever:

?75g wholewheat fusilli
?Large handful baby spinach
☘️50g cherry tomatoes, halved
?100g baby chestnut mushrooms
?1 large garlic clove, finely minced or crushed ?½ veggie stock cube
?1 tbsp tomato paste
?1 tsp oregano

{1✨} Start by cooking the pasta according to the instructions on the packaging. While it’s cooking, heat a teaspoon of oil in a saucepan over medium heat, add the mushrooms and fry for 1-2 minutes then add the garlic and continue to fry for around half a minute without burning the garlic. {3✨} Add the cherry tomatoes, tomato paste, vegetable stock cube and oregano, stir and fry for 2-3 minutes or until the tomatoes start to soften. {4✨} Tip in the pasta and spinach, toss thoroughly to coat each pasta evenly. Continue to toss until the spinach wilts. If the pasta gets too dry, a little of the cooking liquid to loosen. {5✨} Serve in a pasta bowl and sprinkle with chill flakes, nutritional yeast or vegan Parmesan if you desire. #plantbasedeating #plantbasedrecipes #pastabowl
