It’s been a crazy week, and I so badly wish I was coming home to this coconut curry soup ?? •
To make: sauté 1 onion, 3 cloves of garlic, and 2 tbsp of minced ginger in 1 tsp coconut oil until fragrant and softened, then add vegetables of choice (I like broccoli and red pepper) and 3 tbsp of yellow Thai curry paste. Sauté for about 3 mins, then add 1/2 block cubed extra firm tofu, 1 can of coconut milk, and 3 cups of vegetable stock. Simmer until flavours have developed and broccoli has softened, then add in noodles of choice; I use brown rice pasta, but any rice based noodles would work! Enjoy! ❤️
