Making up for missing my favourite day of the week, #toasttuesday with this delicious veggie sandwich 🌿.
I was on the road a lot these past few days, which made me think of a barrier I hear about all the time to eating more plant-based, which is the lack of “convenient” options. While I completely understand this concern, I think it’s actually more simple than many people think! ✨ On the days when I was travelling on the road I made sure to pack tons of snacks (hummus + crackers, dates + peanut butter, and bananas were all my best friends) 🍃 For lunches, I prepared chickpea mash ahead of time by @ohsheglows to share with my family, and brought instant oatmeal packs for breakfast. I also was easily able to find veggie options at fast food restaurants by making simple modifications to menu items 🙌🏼.
With all of this being said, I think it’s important to remember that we’re only human, and eating convenience food or things you might not normally reach for is completely fine. We’re all just doing our best, and guilt should never be an emotion tied to food 💕.
