Whipped up this AMAZING tofu scramble and @vega_team protein shake after my 8 miler this morning! 🏃🏽♀️this scramble is SO easy and SO delicious! To make:
•sauté onion and garlic on a nonstick skillet (or add a tsp of grape seed oil) •add any chopped veggies of your choice- I only had kale (grocery day!) but I’ve also used peppers, mushrooms, and tomatoes as well!
• sauté for about 3 minutes, then crumble the extra firm tofu into the pan
•add nutritional yeast (about 1/4cup), paprika, cayenne, and turmeric (as your taste desires)
•sauté all together until the mixture looks to your desired dryness. If it gets too dry, you can always add a splash of unsweetened plain non-dairy milk!
