Dukan Diet Napoleon Cake
This recipe is suitable for the Cruise phase of the Dukan Diet (PV days).
Ingredients:
For the Cake Layers:
- 4 tablespoons oat bran
- 2 tablespoons wheat bran
- 2 eggs
- 4 tablespoons fat-free cottage cheese
- 1 teaspoon baking powder
- Sweetener (erythritol or stevia recommended)
- 1 teaspoon vanilla extract
- A pinch of salt
For the Cream:
- 2 cups fat-free milk
- 4 egg yolks
- 4 tablespoons cornstarch
- Sweetener (erythritol or stevia recommended)
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Cake Layers:
- Preheat oven to 180°C (350°F).
- In a bowl, combine oat bran, wheat bran, baking powder, and salt.
- In a separate bowl, whisk eggs, cottage cheese, sweetener, and vanilla extract.
- Combine wet and dry ingredients, mixing well.
- Divide the dough into two equal parts and spread thinly on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Let cool.
- Prepare the Cream:
- Heat the milk in a saucepan.
- In a separate bowl, whisk egg yolks, cornstarch, and sweetener.
- Take a ladle of hot milk and add it to the egg mixture, whisking constantly.
- Pour the egg mixture into the saucepan and cook over low heat, stirring constantly, until thickened.
- Add vanilla extract and stir.
- Remove from heat and let cool.
- Assemble the Cake:
- Cut the cake layers into circular or square shapes.
- Place one cake layer on a serving plate and spread cream over it.
- Place the other cake layers on top, spreading cream between each layer.
- Cover the top layer with cream.
- Refrigerate the cake for at least 4 hours or preferably overnight.
- Serve:
- Slice the cake and serve.
Notes:
- Adjust the amount of sweetener to your taste preference.
- If you want a thicker cream, increase the amount of cornstarch.
- If you want thinner cake layers, divide the dough into more parts.
- You can adjust the ingredients and portions according to the different phases of the Dukan diet.
