Big ole bowl of chickpea pasta on this Friday afternoon ? It was rainy all day and what’s better than warm pasta on a rainy day?! Nothing ? besides maybe a warm bowl of soup ? I was craving pasta but realized once it was boiling I didn’t have any sauce ? Made a quick avocado oil and garlic sauce that wasn’t as satisfying as a tomato based sauce would have been but still hit the spot ?? My go to sauce is normally Trader Joe’s pasta sauce or Aldi’s- both are so good and don’t have any added sugar ? ⠀
Used @eatbanza chickpea pasta here- more protein and fiber than regular pasta and a similar taste! Plus you cook it the same way ? Chickpea pasta is a great plant based protein option too if you’re looking to eat more plant based this year ? Paired with leftover shrimp + roasted brussels ?? I didn’t reheat the brussel sprouts but I should’ve tossed them in the skillet along with the mushrooms ??‍♀️ Lesson learned ? Hoping to a have a very chill evening with Eli and Tippy ? at his parent’s house before we head back home Sunday for him to go back to school ?? Hope you guys have a great evening!! lunch details ?? 1/2 cup of @eatbanza cooked according to package directions. Sauce was just 1 tbsp avocado oil + 1 tsp garlic powder + a pinch of sea salt + 1 tsp onion powder all mixed together. Then paired with leftover shrimp (recipe a few posts back) + roasted brussel sprouts (400F for 40 mins with 1 tbsp avocado oil)
