Gluten Free Chocolate Chip Banana Bread Muffins. These would work great as a snack or for a light breakfast option ??⠀

I made these last night for the first time and I was actually a little disappointed with how they turned out texturally. However, I ate them for breakfast this morning and the difference was night and day. The texture was much better this morning. I tried them both cold and reheated and each yielded a good option. If you do decide to make these I suggest making them just before bed and letting them sit overnight because for whatever reason, they are better the next day. You could swap the chocolate chips for blueberries if you wish and it would cut out roughly 200 calories.⠀

Here’s how to make them. ⠀
Ingredients ⠀
1 cup oats⠀
2/3 cup plain Greek yogurt ⠀
2 ripe bananas ⠀
1 scoop whey ⠀
1 egg⠀
1 tsp vanilla ⠀
1 tsp baking powder⠀
1 tsp stevia ⠀
3 Tbsp dark chocolate chips ⠀
Preparation⠀

1. Preheat your oven to 350F. ⠀
2. In a blender, add the oats and pulverize into a flour. Add in the remainder of the ingredients minus the chocolate chips and blend until smooth. ⠀
3. Spray a muffin tin with cooking spray and fill the wells half way with the batter. It will make about 9 Muffins. ⠀
4. Top each with some dark chocolate chips ⠀
5. Bake for 20-22 minutes. ⠀
6. The Muffins will be better after they sit overnight
