{NEW} Creamy Garlic Chicken + Mushrooms ???

makes 4-5 servings
Instructions:
1.5 lbs. skin-on chicken thighs
1 Tbsp Italian seasoning
sea salt and fresh ground black pepper to taste, about 1/2 teaspoon each
2 Tbsp olive oil, divided
4 fresh garlic cloves, pressed or minced
8 oz small button mushrooms
fresh thyme or other herbs of choice, to garnish
For the creamy sauce:
1 Tbsp gluten free flour of choice
1.5 cups grass fed cream, you can use unsweetened almond, cashew, or coconut milk if you want to make it dairy free
1 tsp onion powder
Ingredients:
Whisk the sauce ingredients in a small bowl until really well combined.
Sprinkle your chicken thighs with Italian seasoning, sea salt and pepper, and rub it in on all sides.
Heat 1 Tablespoon of oil in a large skillet over medium high heat. Add in garlic and mushrooms, and sauté until the liquid from the mushrooms is reduced, about 5-7 minutes. Set mushrooms aside on a plate.
While the pan is still hot, add in remaining oil, and the chicken skin side down. Sear on both sides until nice and golden but not entirely cooked through.
Reduce your heat to LOW, and pour in the milk/creamy sauce mixture.
Simmer until the chicken is fully cooked and the sauce has thickened, about 8-10 minutes.
Return the mushrooms back into to the pan to warm, then garnish with fresh chopped herbs and enjoy! ❤Rachel
