To create the binding effect of one egg, use any of the following options:

1. Flour + water mixture: combine 1 tablespoon chickpea, quinoa or whole wheat flour with 2 tablespoons of water to bind a muffin recipe

2. Applesauce: For baked foods like cookies, cakes or scones, add up to 80g (⅓ cup) of apples sauce and ¼ teaspoon of baking powder to help with leavening.

3. Linseeds (flaxseeds): Summer 2 tablespoons of ground linseeds in a small saucepan with 3 tablespoons of water until thickened, let it cook then add to your recipe.
