Wishing you all a happy Tuesday with the most “”decadent”” PALEO ZUCCHINI CHOCOLATE BREAD ?! I hope you all are feeling happy and excited for the weekend! To be honest I’m not having my best day. Feeling so tired and missing my family and friends from Brazil. Fun fact: when I’m feeling a little “low energy” the first thing I try to do is to treat myself with some VERY chocolate-y thing. This bread is by far my new favorite chocolate recipe! Moist, with an intense dark chocolate flavor and perfect texture! This is also gluten, dairy, and refined sugar free. Who wants a bite??? #Ingredients
1 1/2 cup almond flour
1/2 cup tapioca flour
1/4 cup coconut flour
1/2 cup cacao powder
1 tsp baking soda
1/2 tsp salt
3 eggs – I love @vitalfarms
1/2 cup almond milk
1/3 cup maple syrup
1 tbsp apple cider vinegar
1 1/2 cup shredded zucchini
In a large bowl combine all dry ingredients. In the same bowl, add the wet ingredients and stir until the batter is thick and combined. Fold in the grated zucchini. Scoop the batter into a loaf pan lined with parchment paper. Bake it for 45-50 minutes or until a toothpick comes out clean. Optional: Drizzle it with A LOT of melted chocolate chip/bar. Enjoy! ?
