For the Crust:

✔ 200g (about 2 cups) crushed digestive biscuits (or graham crackers)
✔ 80g (⅓ cup) melted butter
✔ 2 tbsp sugar

For the Cheesecake Filling:

✔ 500g (2 cups) cream cheese, softened
✔ 150g (¾ cup) sugar
✔ 2 eggs
✔ 1 tsp vanilla extract
✔ 150g (⅔ cup) sour cream or Greek yogurt
✔ 2 tbsp lemon juice

For the Blueberry Topping:

✔ 200g (1 cup) fresh or frozen blueberries
✔ 2 tbsp sugar
✔ 1 tsp lemon juice
✔ 1 tbsp cornstarch + 2 tbsp water (for thickening)


👩‍🍳 Instructions

1️⃣ Prepare the Crust

  1. Preheat the oven to 175°C (350°F).
  2. Mix the crushed biscuits, melted butter, and sugar in a bowl.
  3. Press the mixture into the bottom of a springform pan and bake for 10 minutes. Set aside to cool.

2️⃣ Make the Cheesecake Filling

  1. Beat the cream cheese and sugar together until smooth.
  2. Add eggs one at a time, mixing well after each.
  3. Stir in vanilla, sour cream, and lemon juice.
  4. Pour the batter over the cooled crust.

3️⃣ Bake the Cheesecake

  1. Bake at 160°C (320°F) for 45-50 minutes, or until the center is slightly jiggly.
  2. Turn off the oven and let the cheesecake cool inside for 1 hour.
  3. Refrigerate for at least 4 hours (overnight is best!).
