Just a hearty bowl of wholewheat pasta and peas with rosemary & onion vegan sausages in homemade tomato sauce.
For the tomato sauce, blend 1 large red onion, 1 large red sweet pepper, 400g tin chopped tomato and 1 fat garlic clove in a food processor. Add 2 tablespoons of olive oil to a medium saucepan then tip in the tomato puree. Add 1 vegetable stock cube and 1 tsp Italian herb mix. Bring to the boil then turn the heat down to a simmer and cook for 35 minutes. Season with salt and pepper as needed.
Cook the sausages according to instructions on the package then serve over pasta and top with the tomato sauce. Garnish with fresh parsley or basil. #pastalover #wholewheatpasta #meatfreemeals
