PALEO SALTED CARAMEL CINNAMON ROLL COOKIES! These babies require minimal ingredients, and are the EASIEST and most DELICIOUS healthy treat for the holiday. Warm them up and they’d make the perfect make-ahead breakfast for the holiday ? They have a cake-like texture (swipe to see) and taste like the most decadent treat, but they are loaded with protein and lower in sugar than a lot of cookies. I am super pumped because @mrm_nutrition Is launching their new Salted Caramel plant based protein powder, and it’s so so so bomb! I tried it for the first time at Expo West last year and finally the day has come. So, I obviously made cookies ? happy Saturday loves! I am tying up some lose ends with work this weekend and trying to relax before the festivities of the holidays begin! Hope you’re having an amazing weekend. •


Recipe:
1 cup almond butter
3 eggs
2 tablespoons coconut flour
1/2 cup coconut sugar
1 scoop Salted Caramel Protein
1 teaspoon baking soda
1/4 teaspoon salt

Cinnamon filling:
1 tablespoon almond butter
2 tablespoons applesauce
1/4 cup coconut sugar
1 teaspoon cinnamon •
Mix all ingredients well with a hand mixer or stand mixer. The batter will be slightly gooey. Allow batter to sit for 10 minutes. Preheat oven to 350. While batter is resting, mix together all ingredients for the cinnamon filling in a small bowl. After ten minutes, wet hands and scoop a ball of batter rolling into a ball. Place on parchment paper, about 2 inches in between each cookie. Press down with wet fingers to flatten. Spoon the cinnamon mixture into a zip loc bag and cut off a small corner. Created a cinnamon swirl with the cinnamon mixture on each cookie. Bake for 12 minutes. Remove from oven, gently press a pecan in the middle of each cookie of you desire. Allow to cool for 10 minutes. Once the cookies have cooled, heat some coconut butter to “ice” the cookies or for non-paleo you can use a powdered sugar icing. •
