PANCAKE Saturday in full effect over here with this paleo PLANTAIN PANCAKE PIZZA! (5 ingredient recipe below) Sorry for all the plantains and pizza this week ?♀️ It is very humid out and I walked to the gym, and this is all I could think about the entire sweaty two miles home…Peep my stories for my tips on not breaking an entire pancake pizza when flipping! (hint: you don’t need to flip it) I think my eyes were bigger than my belly, but now I have half for later. Topped this baby with coconut milk yogurt/berries/granola, avocado/micro greens/tahini, strawberries/chocolate chia seeds/chocolate chips and chocolate yogurt spread/bananas/coconut and of course MAPLE CARAMEL ALMOND butter from @georgiagrinders. •

Plantain pancake: 1 ripe plantain, 2 tablespoons coconut flour, 2 eggs + 1 white (or two flax eggs), 1 scoop of plant protein, 1/2 teaspoon cream of tartar and 1/4 tsp baking soda. Blend all ingredients until smooth. •
