?Walnut ‘meat’ and potatoes ?In this winter freeze, needed something that ‘sticks to your ribs’. This meal was perfect. And this walnut meat tastes really good with rice, pasta, in tacos or as a filling in baked potatoes. ?I just finished ‘spring’ cleaning my apartment. Ok so yes I know it’s nothing like spring but you get the gist?! Enjoying my ‘spring’ cleaned apartment especially now that I’m trapped indoors in this crazy winter weather!?
?Recipe walnut ‘meat’ (serves 5): In food processor, pulse 3 cups walnuts, 3 tsp chili powder, 2 tsp cumin, 1 tsp garlic powder, 1 tsp paprika and 1.5 tbsp nutritional yeast until texture similar to ground meat, with some larger pieces remaining. In saucepan, cook 1 finely chopped large onion in a little vegetable broth until translucent, adding more broth as needed when onions start to stick. Mix in chopped walnut mixture. Cook on medium-low about 5-7 minutes while stirring, adding vegetable broth as needed when dry. Mix in 1-1/4 cup green peas and 1-1/4 cup corn (thawed), juice of 1 small lime and 2 tbsp gluten-free tamari (or soy sauce). Heat until warmed through before serving. Salt to taste. .
