For me, having simple meal prep options are crucial for getting me through the week 🌿 Lunches like this Greek pasta salad are super simple to throw together in 15 minutes and check all the boxes of delicious, nourishing and a great balance of protein, carbohydrates, fat + veggies ✨.
To make 👇🏼:
Boil pasta as per package instructions. Heat up 1/2 cup of edamame, and chop any veggies you want- my personal favourite are cherry tomatoes, cucumber, peppers, red onion, arugula, and kalamata olives. Combine with pasta, then drizzle with olive oil, lemon juice, dried oregano, and olive brine (all to taste). Enjoy! 💛
