Green Goddess Chickpea Salad WrapSomething easy & delicious for you this Tuesday…

Green Goddess Chickpea Salad Wrap??Something easy & delicious for you this Tuesday. No oven or stove required ?? Chickpeas with a creamy dairy-free fresh herb dressing. I was inspired to veganize a recipe I found @bonappetitmag that used canned tuna as the main ingredient. Imo, the best vegan swap for tuna is to mash chickpeas. When mashed, chickpeas become flaky with a tuna like texture.I discovered this method about four years ago from one of my first vegan cookbooks @ohsheglows If you have yet to try chickpeas this way, give it a try, or better yet try this recipe! According to my 9yo: “mommy, this is not just good, it’s great!” ? The recipe ▶️What you need: 1 can chickpeas drained & rinsed, 2 celery stalks finely chopped, 2 green onions finely chopped, 1 garlic clove minced, 1/4 dill pickles finely chopped, 1/4 cup packed basil, 1/4 cup parsley, 1/4 cup vegan mayo, 1/4 cup vegan sour cream, 2tbl water, 2 tbl tahini, 1tsp lemon zest, 2 tbl lemon juice, sea salt/black pepper to taste. What you do:
1️⃣ Mash chickpeas with potato masher/back of fork in a mixing bowl, add chopped celery, green onion, pickles, & garlic, mix well
2️⃣ In a blender, combine rest of the ingredients till smooth
3️⃣ Add dressing to chickpea mix. I wrapped mine in lavash and topped it with some cucumbers that I waffle cut ??? Happy Tuesday IG friends ?
