Whipped up this super easy peanut + lime noodle dish for a post run, pre errand lunch ✨ I love this dish because it’s super satisfying, balanced, and requires basically no cooking time, so it’s perfect on hot days like today ☀️.

To make ??:
1. Pan fry on medium heat 1/3 block of extra firm tofu (cubed) with garlic powder + salt sprinkled on top. Cook on one side for 5 minutes, then flip.
2. Meanwhile, whisk together 1.5 tbsp peanut butter, the juice of 1/2 lime, 1 tsp sriracha, 1 tsp soy sauce, 1/2 tbsp rice vinegar, 1/4 tsp garlic power, 1/4 tsp ginger powder, 1 tsp sesame oil, and 3 tbsp of water (add more or less depending on desired thickness). 3. Boil water and cook rice noodles following instructions on the package. 4. Slice veggies (or spiralize) lengthwise ton make thin strips. I like using carrots, cucumber, radishes + peppers, but use whatever you have on hand!
5. Combine all ingredients and enjoy! ?
