Dukan Cornstarch Waffles

I found an old waffle iron in my mom’s stash, and immediately remembered those awesome waffles that kept popping up in the feeds ❤
I borrowed the recipe from the girls. I made two batches of dough right away – one with cornstarch and one with gluten.
Recipe:
- ✔Egg – 1 pc.
- ✔Kefir – 60 ml
- ✔Cornstarch – 2 tbsp (or gluten – 2 tbsp)
- ✔Oat bran – 2 tbsp
- ✔Sweetener, salt, vanilla
- ✔Vegetable oil – 1 tsp
I’ll say right away, I liked the ones with cornstarch better, they’re crispier, while the ones with gluten were more like pancakes (but I dried them out in the oven). And the cornstarch dough is liquid, so I got more waffles (everything in the photo).
This is probably the most “shortbread-like” cookie I’ve made on a diet. The recipe is definitely a keeper!? I recommend it!
