Cauliflower mash + SPINACH & FETA TURKEY BURGERS + grilled broccolini
Dreaming of this dinner as I sit aboard my train from NYC to Philadelphia tonight 😍 Cauliflower mash Monday is just as much a thing as turkey burger Tuesday is a thing (in case you didn’t know 💁🏼♀️). Soooo if you’re looking for some deliciously simple + satisfying recipes to make this week, this meal is as appropriate tonight as it is tomorrow night (with leftovers coming in clutch later in the week) 👏🏻.⠀
whatsonmyplate: SPINACH & FETA TURKEY BURGERS: (these juicy burgers were a huge *hit* with my family when I made them over the summer, and they’ve been in my regular meal rotation ever since. I like to meal prep both the burgers and the mash in advance, and enjoy leftovers for lunch throughout the week): 1 lb. ground turkey (I recommend 85-90% lean; if you go any higher, your burgers will likely be dry) • 3 cloves garlic, minced • 4 oz. feta cheese • 2 cups chopped spinach • 2 tablespoons fresh parsley, chopped • salt & pepper, to taste • 1) Combine all ingredients in a bowl and mix gently with hands, until thoroughly combined. Shape turkey mixture into four patties; set aside 2) In a large pan or skillet, heat 1 tablespoon avocado oil on medium high heat for ~1 minute; add burgers and cook on each side for 7-8 minutes, or until no longer pink in the center •• CREAMY CAULIFLOWER MASH (recipe in my story highlights) •• GRILLED BROCCOLINI w/ parmesan.
