ROASTED VEGGIE & SHRIMP PASTA SALAD?⠀

Who else is a fan of pasta salads??I love making them, they’re so quick and I can use any veggies I have on hand! This is packed with roasted zucchini? and cherry tomatoes?, corn?, arugula?, pan seared shrimp ? and whole-wheat pasta? and it’s all coated honey – lemon dressing?So delicious!?by @justabithealthier⠀

Here’s the recipe (2 servings):
boil 100g of whole-wheat pasta. In a meantime, in a big skillet, put 2 tbsp olive oil, add 1 chopped garlic, 1 chopped medium zucchini and 10 cherry tomatoes, season with salt and pepper and cook for about 3 minutes. The zucchini should remain crunchy. Transfer into a bowl. In the same skillet, add a little bit more oil, then add about 10 peeled shrimps and 1 crushed garlic. Season with salt and pepper and some hot sauce. Roast until the shrimps are cooked inside. Transfer into the bowl with veggies, add 1/3 cup corn, cooled pasta and coat with the dressing (6 tbsp olive oil + 2 tbsp lemon juice + 1 tbsp honey + salt and pepper). Serve on a big bed of arugula or any favorite leaves.
