Parmesan-parsley egg clouds
Avocado-feta toast
Sautéed spinach with red pepper & parm, and grilled Halloumi
For the egg clouds: separate egg whites and egg yolks, putting the whites in a large metal bowl and the yolks in the broken shells or separate bowls 2) beat egg whites until stiff peaks form 3) fold in 1/4 cup parmesan cheese (if using 4 eggs) 5) mound whites onto greased baking sheet and create a well in each center. 6) bake at 450 F for 3 minutes, remove from oven, add yolk, and bake another two minutes or until set.
